Green Beans with Garlic
Ingredients
- 1/2 t salt - table
- 1/2 lb green beans (ends trimmed)
- 4 t vegetable oil (divided: 2tsp + 2tsp)
- 1 T minced garlic
- 1 t minced ginger (fresh)
- 1/4 t crushed red pepper flakes
- 1 T soy sauce
Method
1. Bring 1.25L (1.25 quarts) of water to a boil in a large pot over high heat. Add salt and green beans; cook until crisp-tender, 3 to 4 minutes. Drain.
2. Heat 2tsp oil in a nonstick skillet over high heat until shimmering. Add the green beans and cook, stirring frequently, about 2 minutes (hopefully they'll be spotty brown by now; if not, proceed anyway).
3. Clear a space in the center of the pan and add the garlic, ginger, and red pepper flakes. Drizzle the remaining 2 tsp oil over these. Cook, stirring frequently, until fragrant, about 15 seconds.
4. Add the soy sauce, mix together, and serve immediately.

SJ Note 13 May 2014: Tasty! We only had half the green beans it called for, but went ahead and used the rest of the ingredients as written - flavor worked out well, so I've doubled all the rest in this copy to reflect that. The beans never got spotty brown in step 2; I guess the heat was wrong. You need to proceed anyway, or else you overcook the beans. Will have again.
