Ingredients

  • 1/2 c milk, scalded but cooled to warm
  • 313 g Flour (Plain)
  • 3.5 g dry active yeast
  • 1/4 c Sugar (Granulated)
  • 1 t salt
  • 1 egg yolk, beaten
  • 57 g butter, melted
  • 28 g butter, melted
  • 1/2 c warm water (110F/45C)

Method

Scald milk.  Set aside to cool, about 15 minutes.

 

In a mixing bowl, stir together flour, yeast, sugar, and salt.  Add warm milk, egg, and first bit of melted butter.  Mix well, adding warm water as needed to make an elastic dough.  Roll out to floured surface and knead dough for about 10 minutes.

 

Place dough in buttered bowl, cover with towel, and set in a warm place to rise until double in bulk, about 1 hour.

 

Lightly oil the muffin pan. Punch down dough and form dough into 1-inch balls. Place 3 balls in each muffin tin. Fill muffin pan, cover with wet paper towel, and allow to rise an additional 1/2 hour.

 

Preheat oven to 425 degrees F.  Brush with remaining melted butter. Bake in preheated oven for 8 to 10 minutes, until golden brown.
