Ingredients

  • Dry ingredients:
  • 166 g whole wheat plain flour (or pastry flour)
  • 1.25 c rolled oats
  • 40 g flax seed (milled)
  • 55 g brown sugar
  • 1 t corn starch
  • 1/2 t sea salt
  • 1/8 t ground cinnamon
  • Wet ingredients:
  • 2 T canola oil (28g)
  • 1 egg
  • 1 T milk
  • 1 t honey
  • 50 g blueberries

Method

1. Preheat oven to 325F. Line baking sheet with parchment paper or a silicone liner.

2. Combine all the dry ingredients in a mixing bowl.

3. Stir in the oil, egg, milk, and honey. Thoroughly mix it; the mixture should be crumbly BUT moist. Gently stir in the blueberries.

4. Divide the mixture into 24 balls. Place the balls into the lined baking/cookie sheet. Flatten each ball.

5. Bake for 15 minutes or until they are light brown.
