Ingredients

  • 2 T soy sauce
  • 1 T hot sauce (Tabasco)
  • 1 t brown sugar
  • 125 g noodles (wide and flat)
  • 1 t oil
  • 225 g chopped meat
  • 1 t oil
  • chopped stir fry veggies
  • 1 t butter
  • 1/2 t crushed red pepper flakes
  • 2 eggs (beaten)
  • sliced green onions (to serve)
  • chopped cilantro leaves (to serve)

Method

Make the sauce: In a small bowl stir together the soy sauce, hot sauce, and brown sugar. Set aside.

Boil water for the noodles; boil until done.

In a large skillet, heat 1t oil. Cook the meat. Remove from skillet and keep warm.

In the skillet, heat 1t oil. Stir-fry the veggies. Remove them from the skillet and keep warm.

In the skillet, heat 1t butter over medium-low heat. Add the crushed red pepper flakes as it heats. Add the beaten egg. Stir gently and cook through. Once the egg is done cooking, turn off the heat.

When the noodles are done, drain the water and add to the skillet with the cooked egg. Add the prepared sauce. Turn the heat on low and stir to coat everything in the sauce. 

Serve, sprinkling the green onions and cilantro on top.
