Ingredients

  • 113 g butter, softened
  • 1/2 c Sugar (Granulated)
  • 1/2 c Sugar (Brown)
  • 1 egg
  • 1 t vanilla
  • 1.25 c Flour (Plain)
  • 1/4 c cocoa powder
  • 2 T cocoa powder
  • 1/2 t baking powder
  • 1/2 T Sugar (Granulated)
  • 7 oz package Rolo candies

Method

In a mixing bowl, cream butter, 1 c sugar, and brown sugar. Add eggs and vanilla; mix well. Combine flour, cocoa and baking soda; add to the creamed mixture and beat just until combined.

 

Shape dough by tablespoons, completely surrounding each candy, including under the candy. In a small bowl, place remaining sugar. Dip each cookie halfway. 

 

Bake at 375 for 11 - 13 minutes or until top is slightly cracked. Cool for 3 minutes; remove to wire racks to cool completely.

Notes

SJ Note 28 July 2008: Too sweet.  Consider reducing sugar next time.
