Cuban Style Black Beans
Ingredients
- 3/4 lb black beans
- 8 c water
- 1/2 green bell peppers, chopped finely
- 1/2 white or yellow onion, chopped finely
- 3 cloves garlic, minced
- 3 T apple cider vinegar
- 2 T olive oil
Method
Soak beans in large pot of water for 5 hours. Drain and rinse well. Add beans back to large pot and add water. Boil beans for 30 minutes. Turn the heat down to low and add the bell pepper, onion, garlic, vinegar, and olive oil. Continue to cook until beans are tender.
Notes
SJ Note 3 April 2010: This isn't flavorful enough. I'm cooking down the remaining beans to see if letting them cook longer will get them nice and flavorful and creamy (sorta like red beans & rice). We had it over rice, added gammon (ham) because we had some extra, and plenty of salt and pepper, and it was filling. If the leftovers are nicer after this longer simmer time, I'll change the status of this from rejected, and revise the method, but for now it's rejected, entirely too bland.
SJ Note 9 April 2010: The leftovers didn't improve in flavor at all. This one's completely rejected.
