Ingredients

  • Dry ingredients
  • 235 g whole wheat plain flour
  • 40 g sugar
  • 1/2 T ground cinnamon
  • 3/4 t baking powder
  • 3/4 t baking soda
  • 1/4 t table salt
  • Wet ingredients
  • 1.5 c grated carrots
  • 180 g applesauce (unsweetened)
  • 3 eggs (large, lightly beaten)
  • 90 mL milk
  • 81 g oil (90mL)
  • 1/2 T vanilla extract

Method

1. Preheat oven to 350F. Butter and flour standard muffin tins, or line with papers. Set aside.

2. In a large bowl, combine the dry ingredients.

3. In a separate bowl, combine the wet ingredients.

4. Add half the wet to the dry. Stir until blended. Then add the rest. Stir until blended.

5. Spoon into muffin cups. Bake for about 20 minutes, until a toothpick comes out clean.

SJ Note 13 July 2024: Found this handwritten in my files; not sure where it came from. Only made 8 muffins as written, so I've sized it up here to 12. Have reduced the sugar according to our tastes these days; may play around next time with substituting more applesauce for some of the oil.
