Ingredients

  • Dry ingredients
  • 187 g white plain flour
  • 187 g wholemeal plain flour
  • 1 t baking soda
  • 1 t baking powder
  • 1/2 t salt
  • 2 t ground cinnamon
  • 1/2 t grated nutmeg
  • Wet ingredients
  • 50 g vegetable oil (1/4c)
  • 120 g applesauce (1/2c)
  • 96 g white sugar
  • 3 eggs
  • 1 t vanilla extract
  • 850 g canned peaches (in juice, diced, 2x 15oz cans, juice reserved OR about 2.5c fresh peeled chopped)
  • Glaze (optional)
  • 60 g powdered sugar (1/2c)
  • 2 T peach juice (reserved from can, or lemon juice)
  • 1/2 t vanilla extract

Method

1. Preheat oven to 350F and grease three small loaf pans.

2. If using canned peaches, drain the juice, reserving it if you plan to make the glaze. Prepare the peaches: peel and dice as necessary.

3. In a mixing bowl, mix together the dry ingredients. Set aside.

4. In another mixing bowl, mix together oil, applesauce, and sugar on medium speed.

5. Reduce speed to low and add eggs, one at a time, mixing well after each addition.

6. Add vanilla and peaches, mixing to combine.

7. Gradually add the flour mixture to the wet ingredients, mixing just until fully incorporated.

8. Divide the batter among the prepared pans. Bake for 50-60 minutes, until a toothpick comes out clean when inserted in the centre.

GLAZE

While the bread is cooling, prepare the glaze, if using.

9. Add 1 Tbsp peach juice (or lemon juice) plus 1/2 tsp vanilla extract to the powdered sugar, stirring well.

10. Add more peach juice as needed to achieve your desired consistency.

11. Drizzle over bread that is still warm.

Notes

Notes from source: The glaze is totally optional. It adds just a bit of additional sweetness, but the bread will still be delicious without it. If you want to make a glaze but used fresh peaches (and therefore don't have peach juice), fresh lemon juice is a good substitute.

If you don't have a stand mixer, you can use an electric hand mixer or simply mix by hand.
