Ingredients

  • 1.25 c boiling water
  • 113 g margarine
  • 1 c Sugar (Brown)
  • 1 t vanilla
  • 1 t baking soda
  • 1 t cinnamon
  • 1 c oatmeal (not instant)
  • 1 c Sugar (Granulated)
  • 2 eggs
  • 1.5 c Flour (Plain)
  • 1/4 t salt
  • 1/2 c chopped nuts

Method

Pour boiling water over oatmeal and margarine. Let sit until cool. Add sugars, eggs, and vanilla and mix well. Sift remaining ingredients together, add to oatmeal mixture and mix well. Pour into 1 large (9x5x3) or 2 small greased and floured loaf pans. Bake in preheated oven at 350F for 60 minutes or until tests done. 

Notes

This does freeze well.
