Ingredients

  • 2 c oatmeal
  • 2 c boiling water
  • 2 t salt
  • 28 g butter
  • 2.25 t yeast
  • 3/4 c warm water (110F/45C)
  • 1/3 c Sugar (Dark Brown)
  • 3.5 c Flour (Plain)
  • butter, melted, for bowl

Method

Add oatmeal to boiling water. Add salt and butter. Let cool. Sprinkle yeast over warm water. Stir until dissolved. Add brown sugar. Blend in cooled oatmeal mixture. Add flour to make dough soft, up to 4 cups, as needed. Place in buttered bowl and let stand until doubled in size. Knead on floured board. Divide in half; shape in loaves. Place in greased loaf pans. Let stand until doubled in size. Bake 375F for 35-40 minutes.
