- 300 g London broil (flank)
- 1/4 c Flour (Plain)
- 1 slice bacon
- 1/2 carrot
- 2 small new red potatoes
- 2 mushrooms
- 4 fresh pearl onions
- 1 cloves garlic
- 1 bay leaf
- dash marjoram
- dash thyme
- dash salt
- freshly ground black pepper
- 1/2 c Burgundy wine or beef broth
Method
Cut beef into ½ inch strips, coat with flour, shake off excess; set aside. Dice carrots, cut potatoes in quarters, slice mushrooms and set aside. Dice bacon and cook in large skillet over medium heat until partially cooked. Add beef; brown. Layer carrots, potatoes, mushrooms, onions, garlic, bay leaf, marjoram, thyme, salt, pepper, beef and bacon mixture in crock pot. Add wine to beef and bacon drippings, bring to a boil, scrape up drippings from skillet, simmer. Pour wine mixture into crock pot. Cook on low 6 hours or until beef is tender. Discard bay leaf before cooking.
