Taco Bell Baja Sauce
- 1 red bell pepper, seeded and coarsely chopped
- 1 large jalapeno, chopped in half
- 2 T diced Spanish onion
- 1/2 c mayonnaise
- 1/2 T vinegar
- 1/8 t cracked black pepper
- dash garlic powder
- dash cumin
Using a food processor, puree peppers and onion. Mix 1 cup mayonnaise and 4 t of the vegetable puree in a medium bowl. Add remaining ingredients and mix well. Chill for several hours to let flavors develop.
SJ Note 7 Apr 2012: Tried using a whole red bell pepper and just combining all of it with the mayo this time; made it far too runny. Either limit yourself to the 4tsp of vegetable puree mentioned above, or use far more mayonnaise.
