Ingredients

  • 55 g Sugar (Brown) (1/4 cup)
  • 1/2 T onion powder
  • 1 t celery salt
  • 1 t garlic powder
  • 1/4 t chili powder
  • 1/2 T black pepper (finely ground)
  • 1/4 t cayenne pepper (optional)
  • 280 g tomato ketchup (1 cup)
  • 2 T Vinegar (Cider)
  • 70 g Dijon mustard (1/4 cup)
  • 1.5 T Worcestershire sauce
  • 1 t chipotle paste

Method

In a medium saucepan, combine all the ingredients. Bring to a boil, stirring to dissolve the sugar. (You may want to have a lid handy to protect yourself and your kitchen from any sputtering.) Reduce the heat and simmer for 25 minutes, stirring occasionally.  When done, let cool, then store in the fridge til ready to use.

Notes

SJ Note 26 Aug 2009: Definitely a keeper! Mildly spicy, not in a bad way, and very flavorful. (All that despite not having the full simmer time, nor the celery salt, and definitely leaving out the liquid smoke).
