Ingredients

  • 28 g butter
  • 1 T minced garlic
  • 1/2 c chopped green onions
  • 1/2 c chopped onion
  • 2 c whipping cream (heavy cream in the US)
  • 65 g grated parmesan cheese
  • grated gruyere cheese (to taste)
  • 1 T blackened redfish seasoning

Method

Place butter, garlic and green onion in a sauce pot and cook just until the garlic releases it flavor. 

Add heavy cream and cheese and cook until reduced to desired thickness. When reduced, the sauce should heavily coat the back of the spoon. Add blackened redfish seasoning and adjust with more spice to taste.
