Pimento Cheese Attempt 1
- 158 g grated sharp cheddar cheese
- 65 g grated gouda
- 112 g grated emmental
- 115 g diced pickled cucumbers
- 50 g diced pimentos
- 1 t minced garlic
- 67 g mayonnaise (as needed)
Mix all ingredients in large bowl; add mayonnaise and mix until it achieves a spread consistency.
Refrigerate, but set out for 20-30 minutes before using.
SJ Note 18 Sept 2009: This tastes pretty good, but I may tweak it a bit: it seems to be missing something. Next time, I think I'll shred the cheese more finely (I just used the coarse grate this time). Also, want to try this again with better pickles; this batch of pickles is only decent, not good.
