Black Beans with Bacon

Ingredients

  • 120 g diced bacon
  • 1/2 c chopped onion
  • 1/2 c chopped green bell pepper
  • 1.5 c pork stock (or all the juice from the can)
  • 1 t cumin
  • 1 T Sugar (Brown)
  • 15 oz canned black beans (black turtle beans in the UK)
  • 1/2 t Salt (Sea)
  • 1/4 t pepper

Method

In a medium sized sauce pan, place bacon, and then turn on heat to medium, stirring to cook.  Once bacon is nearly cooked through, add the onions and peppers and saute.  Cook them until the onions are transparent.  This should take about 5 minutes.  

Open your can of black beans and pour just the juice over your vegetables.  If using beans you've prepared from dried, add some pork stock at this point, 1.5 cups (that's how much liquid comes in the can!).  Add cumin and brown sugar and stir.  Let this cook together for just a few minutes.  Then add your beans and stir everything together.  Turn the heat to low and cover.  Let simmer for about 20 minutes.

Notes

SJ Note 24 Sept 2009: We were less than impressed by this, but it was pretty decent when we added soy sauce to the rice (Yellow Rice 1) and mixed the two together.  I've increased the salt and pepper in this copy; I may tinker with adding other stuff, if we make it again.

SJ Note 9 Feb 2010: Pulled the leftovers out of the freezer, it doesn't keep so well.  Don't think we'll be making it again.
