Ingredients

  • 1/2 t saffron pistils
  • 1/4 c chicken broth (hot)
  • 1/3 c chopped onion (coarsely chopped)
  • 3 cloves minced garlic
  • 1 c chicken broth
  • 1 T chicken broth
  • 1/2 t salt
  • 1/4 t pepper
  • 1/4 t ground cumin
  • 1/3 t tomato sauce (for color)
  • 38 g butter
  • 1.5 T chopped cilantro (optional)
  • 1 c rice (uncooked)
  • 1/3 c peas (optional)

Method

Combine saffron pistils and hot chicken broth; set aside to bloom for 2 - 12 hours. 

In a blender, add all ingredients (including saffron and its liquid) except for rice and peas.  Blend.

In a small pot, bring mixture to a boil.  Add rice.  Add peas.  Simmer on low for 15 minutes.

Notes

Do Not Stir!  This will make it mushy.

The full effect of the saffron is had after blooming for 2 hours, but it can be left up to 12, depending on your schedule.

SJ Note 24 Sept 2009: This was only mediocre, but good once we added soy sauce.  I've upped the salt, pepper, and cumin in this copy.
