  • 28 g Salt (Sea) (1 oz)
  • 100 g Sugar (Granulated)
  • 55 g Sugar (Dark Brown)
  • 1.5 c chicken broth (double-strength)
  • 1/2 c mustard (prepared)
  • 1/4 c cider vinegar
  • 1/2 c Worcestershire sauce
  • 1/2 c tomato paste
  • 1 t ground cayenne pepper
  • 1 t ground chili powder
  • 1/4 c liquid smoke (optional)

Combine all ingredients in a pot; simmer for 2 hours.  Serve!

SJ Note 1 October 2009: This was good!  It originally calls for 1 T cayenne and 1 T chili powder, which I pared down to 1/2 t of each originally; didn't have enough kick, so I upped it.  Before doing that, Chris added some Tabasco Chipotle to his, and it was nice.  It was too liquidy, though (even after a few hours of simmering), so I've changed the 3 cups chicken broth for 1.5 cups double-strength chicken broth.  I left out the liquid smoke, of course.  The yield needs a bit of adjusting; I still didn't get it as thick as I'd like, so I'll have to check that the next time I make this.  A good sauce, though!
