Ingredients

  • 190 g sultanas
  • 65 g sugar (demerara)
  • 325 mL tea (hot, strong)
  • 300 g Flour (Self-Raising)
  • 37 g butter
  • 1 egg (beaten)
  • 1 egg yolk (beaten)

Method

Soak the sultanas in the tea and sugar for between 5 and 8 hours (or overnight).


Grease and/or line two one-pound loaf tins.


Rub the butter into the flour. Mix the eggs into the tea and fruit mixture then combine in the bowl with the flour/butter, mix well.  Divide between the two tins.  Cook at 180°/350°/gas mark 4 for 40-45 minutes.


Cool before slicing.
