  • 1/2 c chopped onion
  • 1/2 T minced garlic
  • 1 leek (thoroughly washed and chopped)
  • 1 t olive oil
  • 1 c grated potatoes
  • 1 c shredded cheese
  • 1/2 c grated carrot
  • 1 egg yolk (lightly beaten)
  • 1/2 t fresh lemon juice
  • 2 T finely chopped parsley
  • 2 T bread crumbs
  • 1/4 t dried thyme
  • 1/4 t dried rosemary
  • 1/4 t dried sage
  • salt (to taste)
  • pepper (to taste)
  • 1/4 c grated parmesan cheese


Preheat the oven to 350F/Gas 4/180C; saute the onion, garlic and leek in the olive oil until just softened, then allow them to cool

Lightly grease a 2-3-cup capacity ovenproof dish.

Combine all the ingredients in a large bowl and season to taste with salt and freshly ground black pepper.

Transfer the mixture into the prepared ovenproof dish; add the (optional) grated parmesan (if using) and bake for 40-45 minutes until the top is golden; cut into slices and serve with salad greens.
