Ingredients

  • 1/2 lb ground beef
  • 1/4 c chopped onion
  • 1 T taco seasoning
  • 2 flour tortillas (large, 8-10")
  • 8 oz refried beans
  • 1.5 c shredded cheddar cheese
  • 5.4 oz cream of mushroom soup
  • 2 oz sour cream
  • hot sauce (as desired)

Method

Brown ground meat and onion; drain.  Add taco seasoning and stir in refried beans.

In a separate bowl, mix soup and sour cream. 

Spread half of sour cream mixture in the bottom of a casserole dish.  Tear up half of the tortillas and spread over sour cream mixture.  Put half the meat mixture over that.  Add a layer of cheese, and hot sauce if desired.  Repeat the layers.

Sprinkle cheese over top and bake, uncovered, at 350F for 20-30 minutes.

SJ Note 2 April 2010: This was good!  The taco seasoning is just right.  Needs less tortilla and more meat mixture and soup mixture in the future.  I'll use the whole can of refried beans, and more cream of mushroom soup, and probably only about 1.5 tortillas.  The taste was good, though: this is a keeper!

SJ Note 13 Aug 2012: This was only okay.  Easy.  A tad bit spicy - might cut the chili powder (in the taco seasoning) a smidge next time.  I doubled what's written, including a double batch of taco seasoning, but didn't change the proportions as mentioned above.  I think increasing the beans and soup would've been even more sloppy than it already was, so I wouldn't actually do that in the future.
