Igor's Cholent
Ingredients
- The barley & bean mix
- 45 g barley
- 45 g dried lima beans (or 3/4 cup cooked/canned)
- 22 g dried pinto beans (or 1/3 cup cooked/canned)
- 22 g dried black beans (or 1/3 cup cooked/canned)
- The spice mixture
- 1.25 t salt
- 1 t Emeril's Essence
- 1 t black pepper
- 1.25 t garlic powder
- 1.25 t onion powder
- The other stuff
- 30 g chopped onion
- 1/2 lb potatoes (peeled and cut into chunks)
- 1/2 lb stew beef (cut into bite size pieces)
- 35 g ketchup
- 1/4 t chili powder (to taste)
- water (or stock, as needed)
Method
Soak all beans and barley overnight (or use quick soak method: bring to a boil and let sit, covered, for 1 hour). Drain well.
Layer half of the bean mixture at the bottom of a 2 quart pot. Place half the meat atop that, then half the onions. Sprinkle half the spice mixture on top of that. Top with half the potatoes. Repeat. Top with ketchup. Add chili powder.
Add water or stock to cover, and slow cook about 20 -24 hours.

SJ Note 20 Feb 2010: This seems like it should be good, all the ingredients are ones we enjoy and have fairly often. Chris liked it, but something was just not right to me, I couldn't put my finger on what. Try it, though - perhaps my tastebuds were just off. Makes a great meal to come home to after a day out in the cold!
