- 1 T neutral oil
- 1/3 lb broccoli, trimmed, the stems cut into pieces no more than 1/8" thick
- salt
- 1/4 t Sugar (Granulated)
- 1/4 c stock
- 1 T soy sauce
Method
Put the oil in a large, deep skillet over medium-high heat. When it's hot, add the broccoli, raise the heat to high, and cook, stirring, until it's bright green and glossy and beginning to brown, about 3 minutes.
Sprinkle with salt and add the sugar and stock. Stir and continue to cook until almost all the liquid evaporates and the broccoli is tender, about 2 minutes more. Stir in the soy sauce, taste, and adjust the seasoning, and serve.
Notes
This was quite good - the soy sauce makes it a great side dish in and of itself. Don't add the soy sauce if going to add cheese, though.
