- 3/4 c finely chopped onion
- 1.5 T butter (unsalted)
- 120 g fresh bread crumbs
- 1 T dried sage
- salt (to taste)
- black pepper (to taste)
- water (as needed)
Method
Melt butter in a skillet, add the onions and cook until soft.
Mix the onions, bread crumbs, sage, salt, and pepper in a bowl. Add water until the mixture just forms a plastic dough. Split the dough into 6 pieces and form into spheres, place in a heatproof dish and cook in oven at 190C / 375F / Gas 5 until the outside begins to brown.
Notes
This is based on a family recipe. The breadcrumbs used may be from normal white bread, or from cornbread or other sources (do not use shop-bought dried breadcrumbs, this will not work). The sage and onion may be replaced by other herbs or spices as desired.
