Ingredients

  • 1 c hot coffee
  • 1 c cocoa powder
  • 1 c water (cold)
  • 3 c Flour (Cake)
  • 2 t baking soda
  • 1/2 t baking powder
  • 3/4 t salt
  • 8 oz butter (unsalted)
  • 2.5 c sugar
  • 4 eggs (large)
  • 1/2 T vanilla extract

Method

Grease and flour two 10"x3" round pans.  Preheat the oven to 350F.

In a bowl, combine the coffee and cocoa powder, and whisk until there are no lumps.  Add the cold water and whisk until smooth.

Sift together the cake flour, baking soda, baking powder, and salt.

In the bowl of an electric mixer, beat the butter and sugar at high speed until light and fluffy.  On medium speed, slowly add the eggs and vanilla, and cream well.  Add the dry ingredients alternately to the butter mixture with the cocoa, mixing until smooth.

Pour 3 cups of batter into one 10" pan and the remaining batter into the other 10" pan.  Bake the less full pan for 20-25 minutes and the fuller pan for 30-35 minutes, or until a cake tester inserted into the center of the cake comes out clean.  Cool the cakes on a wire rack for 15-20 minutes before turning them out of their pans.

SJ Note 20 March 2010: Neither of us liked this, we both found it bland, and I didn't like the texture.  I may try it again, a full batch, just to make sure I didn't do any of the reductions wrong in my haste.
