Ingredients

  • 2 c Sugar (Granulated)
  • 1.75 c Flour (Self-Raising)
  • 1 c unsweetened cocoa powder
  • 2 eggs
  • 1 c milk
  • 1/2 c vegetable oil
  • 1 t vanilla extract
  • 1 c water
  • Frosting:
  • 1 c butter (softened)
  • 1 t vanilla extract
  • 3 c Sugar (Icing) (360g)
  • 3 T milk
  • 6 T unsweetened cocoa powder

Method

Preheat the oven to 350F.  Grease and flour two 9" round pans.  Set out the butter for the frosting to soften.

In a large bowl, stir together the sugar, flour and cocoa. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed. Stir in the water. Batter will be thin. Divide batter evenly between prepared pans.

Bake 30 to 35 minutes in the preheated oven, until the cake springs back and the touch and center tests done.

Cool in the pans for 10 minutes, then remove to a wire rack to cool completely. Level as needed.

For the frosting:

In a large bowl, cream together the butter, vanilla and confectioners sugar. Add in the milk, beating until light and fluffy. Use extra milk, if needed, to reach desired consistency. Frost. :)

Notes

SJ Note 1 April 2010: Well, I tried to make this tonight.  But I accidently used plain flour instead of self-raising flour.  It's got potential, so I shall try it again ... with the right flour, I hope.
