Spanish Bar Cake
Ingredients
- 1.5 c raisins
- 2 c Flour (Plain)
- 1.5 c Sugar (Granulated)
- 1/2 T baking soda
- 1 T cocoa powder
- 1 t cinnamon
- 1 t salt
- 1 t nutmeg
- 1 t allspice
- 1/2 c vegetable oil
- 2 c apple sauce
- 2 eggs
Method
Preheat oven to 350 degrees F. Prepare a 9 x 13 in. baking pan with cooking spray (or butter and flour). Plump the raisins in warm water (I do this in a measuring cup that I’ll use for wet ingredients later — one less dish to clean).
In a large bowl, whisk all dry ingredients together. Add oil, applesauce, and eggs. Mix well. Add in raisins and stir to combine. Pour batter into prepared pan, rapping 3-4 times on a counter to release trapped air bubbles. Bake for 30-35 minutes or until a toothpick inserted into the center comes out with only a few moist crumbs. Let cake cool completely before frosting.
Frost completely cool cake with buttercream. Use a fork to rake grooves into the frosting to resemble A&P’s cake presentation.

SJ Note 1 May 2010: This is good! We only had 1 cup of raisins, which worked out fine; I also didn't fully let them plump up, I'll have to work the timing better next time. I made some spiced unsweetened apple sauce with Granny Smiths for this, took nearly all the sauce of 6 apples to get the 2 cups. Quite tasty, a definite keeper!
