Miracle Whip
Ingredients
- 1 t Salt (Table)
- 2 T Sugar (Icing)
- 1 T lemon juice
- 1/2 t paprika
- 1 t garlic powder
- 1/2 t ground white pepper
- 1/2 t onion powder
- In The Pot:
- 1.5 T Flour (Plain)
- 1/2 T mustard powder
- 1/2 c water (boiling)
- 2 T vinegar
- To Emulsify:
- 2 egg yolks
- 1.5 c oil (the blander the better - do NOT use olive oil!)
Method
Mix the first lot of spices together. Set aside.
Mix the flour, mustard, boiling water, and vinegar together in a small pot until smooth. Cook until smooth and paste-like (but not too thick). Set aside.
Place the egg yolks in a bowl; add the oil drop by drop at first while mixing with an electric hand mixer (tilt the bowl if needed). Once an emulsion forms, you can add the oil a bit faster. Continue adding until all the oil is incorporated.
Slowly add the hot mixture from the pot into the oil-egg mixture. Then add the first lot of spices. Adjust seasoning to taste.
Store in fridge.

SJ Note 29 March 2010: This is tasty! Definitely has the right consistency; the flavoring will take some tweaking, but it is good for me as listed here. I was a bit concerned about the consistency for a bit, but the flour mixture really helped thicken it up.
