- 4 c peaches, sliced or chopped
- 3.5 c Sugar (Granulated)
- 2 T lemon juice
- fresh or dried ginger (optional)
Mix peaches, sugar, lemon juice in saucepan. Stir frequently. Bring to a hard boil, let cook until thickened, about 30 minutes. Prepare jars and lids--sterilize in boiling water bath. When honey has reached preferred consistency, pour into sterilized jars, wipe rims, then cap. The jars need a vacuum seal--the tops will pop down. Store in pantry or cool, dark cupboard. Great on pancakes, biscuits, etc. This shouldn't "set" the way jelly does. It should be slightly liquid. It is, after all, "honey," not jam or jelly."
Actual directions call for 3-4 cups sugar.
