Ingredients

  • 1 lb potatoes (peeled and thinly sliced)
  • 1 thinly sliced onion (large)
  • 3 cloves minced garlic
  • 1/4 c pumpkin seed oil
  • 2 T cider vinegar
  • 1 T ground paprika
  • salt (to taste)
  • water (if desired)

Method

Cook the sliced potatoes til just tender; drain and set aside.

In a large bowl mix together all the other ingredients.   Add salt to taste, dilute with a little water if the flavor is too strong.  You can add more oil or vinegar to make more dressing if necessary.

Mix in the potatoes, stir together gently so as not to break up the potatoes.

Notes

SJ Note 1 April 2010: This has two flavors: potato and ONION.  If you decide to try this, pare down the onion significantly.  Usually when recipes call for "1 onion" it works out to one cup chopped for us, for your reference.  But yes, all the other flavors were completely overpowered by the onion in this recipe.  I tried it to try out the pumpkin seed oil, but we didn't taste it here.
