Ingredients

  • 31 g flour
  • 57 g butter
  • 3/4 c finely chopped onion
  • 1 finely chopped shallot
  • 1 lb finely chopped celery
  • 1/2 t Salt (Table)
  • 1/4 t ground white pepper
  • 1/2 t celery seed
  • 1/2 t parsley
  • 1/4 t ground rosemary
  • 1/8 t ground nutmeg
  • 2 c chicken stock
  • 1 c double cream

Method

Add flour and butter to sauce pot; heat over medium heat, stirring constantly, about 2 -3 minutes, until it just starts to color. 

Add onion, shallot, and celery; cook until vegetables go soft.  Add spices, then gradually pour in stock.  Blend soup with a stick blender.  Simmer 2 hours.

*If desired, stop here and let cool to freeze.  When you want to eat the soup, thaw and reheat, and start again at this point.* 

Add cream.  Adjust seasonings to taste, heat through; serve.
