Spiced Apple Cider Muffins
Ingredients
- Streusel:
- 28 g Sugar (Light Brown) (2 T)
- 11 g Flour (Cake) (4 tsp)
- 1/2 t ground cinnamon
- 14 g butter (unsalted) (cut into small pieces)
- Muffins:
- 130 g Flour (Cake)
- 125 g Flour (Plain)
- 1/2 T baking powder
- 1/2 t baking soda
- 1/4 t salt
- 1 T ground cinnamon
- 1/2 t ground nutmeg
- 1 egg (large)
- 73 g Sugar (Light Brown)
- 1/2 c apple butter
- 1/3 c maple syrup
- 1/3 c apple juice (apple cider in the US)
- 1/3 c plain yogurt
- 1/4 c vegetable oil
Method
Preheat oven to 400°F. Coat 12 muffin cups with cooking spray.
To prepare the streusel: Mix the brown sugar, cake flour and cinnamon in a small bowl. Cut in butter with a pastry blender or fork until the mixture resembles coarse crumbs.
To prepare muffins: Whisk cake flour, all-purpose flour, baking powder, baking soda, salt, cinnamon and nutmeg in a large bowl.
Whisk egg and brown sugar in a medium bowl until smooth. Whisk in apple butter, syrup, cider, yogurt and oil. Make a well in the dry ingredients; add the wet ingredients and stir with a rubber spatula until just combined. Scoop the batter into the prepared muffin cups Sprinkle with the streusel.
Bake the muffins until the tops are golden brown and spring back when touched lightly, 15 to 20 minutes. Let cool in the pan for 5 minutes before serving!
