Ingredients
- 1 c chopped onion
- 1 chopped green bell pepper
- 1 cloves minced garlic
- 2 T butter (unsalted)
- 1/2 c chopped tomatoes
- 1/4 c minced parsley (fresh)
- 5 eggs (lightly beaten)
- 2 c shredded mozzarella cheese
- 1/2 c fresh bread crumbs
- 1 t Worcestershire sauce
- 1/2 t Salt (Table)
- 1/4 t ground black pepper
Method
In a skillet, saute the onion, green pepper and garlic in butter for 5 minutes or until tender. Remove from the heat. Stir in tomatoes and parsley; set aside. In a large bowl, combine the remaining ingredients. Stir in reserved vegetables.
Pour into an ungreased 9-in. pie plate. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.
Notes
SJ Note 18 Jan 2012: This was only okay; quite bland. If we made it again, we'd make a great deal of alterations to it. Frittata's easy like that, though, a lot like omelettes - add whatever you like - so we may well try it sometime.
