Honey & Crystallized Ginger Cookies
Ingredients
- 250 g Flour (Plain)
- 2 t baking powder
- 1 T ground cinnamon
- 1/2 t salt
- 170 g butter (softened)
- 1 c sugar
- 1 egg
- 81 g honey (or 1/4 cup molasses)
- 1/4 c crystallized ginger (roughly chopped)
- For Rolling:
- 1/3 c sugar
- pinch ground cinnamon
- pinch ground ginger
Method
Whisk flour, baking powder, cinnamon, and salt in a medium bowl. Cut in butter.
In a separate bowl, combine the sugar, egg, and honey/molasses.
Add the wet ingredients to the dry and combine well. Fold in the ginger and chill for at least 30 minutes.
Meanwhile, combine 1/3 cup sugar with a pinch of cinnamon and ground ginger in a small bowl. Preheat oven to 375° and line a baking sheet with parchment paper.
Once the dough has chilled, roll the dough into small Tablespoon sized balls and roll in the sugar mixture. Place on a greased or lined baking sheet and bake for 8-10 minutes.
Notes
SJ Note 28 May 2011: We don't like these, but I suspect we just don't like the crystallized ginger. Some people eat it as a snack, so we did try it plain, and found it entirely too strong to be likeable for us. The cookies didn't do enough to help the crystallized ginger for our taste buds, but it's a fine recipe, and if you like crystallized ginger I urge you to try this!
