Semola con Leche
Ingredients
- 4 c milk
- 3/4 c Sugar (Granulated) (165g)
- 2 cinnamon stick
- 1 orange peel (optional)
- 3/4 c flour - semolina
Method
Put milk, sugar, cinnamon, and orange peel in a saucepan. Let milk boil and then sprinkle semolina flour. Mix with a wooden spoon and let cook for 3 minutes.
Remove from heat and place in a square pan. Let cool to room temperature; remove cinnamon sticks and orange peel. Refrigerate at least 2 hours.
You'll be able to cut it in squares and serve.

Notes from source: If you want, you can put the mix in individual pots. It is originally served with a sauce made with "chancaca" (also known as panela sugar or piloncillo), but I topped the portions with raspberry jam, or you can add caramel sauce.
SJ Note: The flour sprinkling into the milk clumped. We used fine semolina flour, not sure if coarse would have made any difference. I was out of oranges (so had no peel), and used orange extract instead, about 1/8 t. The flavor in the end was almost nonexistent. Definitely not worth trying to fix the clumping problem.
