- 250 g butter (softened)
- 150 g sugar (castor)
- 250 g sifted flour (plain)
- 20 g Corn Starch / Corn Flour
- jam (for filling)
- 240 g sugar (icing)
- 2 T water
- 3 cherry (glace, or other suitable topping)
Cream butter and sugar together.
Add flour and corn flour, mix to form a smooth dough.
Roll out to approximately 7mm thick, cut into small cookie shapes.
Place on greased baking sheet and cook for 12 to 15 minutes, until golden.
Leave to cool on the sheet for 5 minutes, remove from cookie sheet and cool completely on a wire rack.
Make a thick icing using the icing sugar and a small amount of water.
Once cool, sandwich with jam, top with icing and a quarter cherry (or 1/64th...)
