- 2 pie crusts (small, top and bottom)
- 28 g butter (2T)
- 1/2 lb shrimp (shelled and deveined)
- 5 oz cream of mushroom soup
- 1 c basic vegetable mixture
- Cajun seasoning (to taste)
Method
Saute shrimp tails in butter about 5 minutes. Remove shrimp, add basic vegetable mix to butter, and saute for 10 minutes. Season shrimp and add to mixture, along with the soup. Cook at least 20 minutes. If too thick, add a little Sauterne wine or water.
Place in pie shell and cover with top. Bake in 300F oven until brown.

SJ Note 30 Sept 2010: Sadly, this one of Tony's disappointed. Perhaps we didn't use enough seasoning. It was okay, and we ate it tonight, but it didn't make us cry, as Tony says he'll do in his introduction. Ah, well; win some, lose some.
