Honey Glazed Carrots
Ingredients
- 225 g carrots
- zest and juice of 1/2 lemon
- 1 T clear honey
- 1/4 t salt
- 1 t light soy sauce
- pinch of cayenne pepper
- pinch of ground nutmeg
- 1/8 t dried tarragon
- fresh ground black pepper
- tarragon sprigs, to garnish
- lemon rind, to garnish
Method
Peel the carrots and slice into pieces. Put into saucepan with the lemon rind, honey, and salt.
Add just enough water to cover the carrots. Bring to a boil. Boil vigorously for 10-15 minutes, stirring occasionally, until most of the liquid evaporates. Reduce the heat and stir the carrots to coat in the glaze.
Add the lemon juice, soy sauce, cayenne pepper, nutmeg, and tarragon to the pan. Mix well and season with black pepper.
Cook gently for a further 3 minutes. Spoon into a warm serving dish. Garnish with tarragon and lemon rind, if using.
Notes
To microwave, mix the carrots, lemon rind, honey, and salt in a suitable dish. Cover with non-PVC cling film, and pierce with a knife. Cook on high for 8 minutes for a 650W oven. Stand for 3 minutes. Remove cling film and stir in the rest of the ingredients. Garnish as preferred and serve.
