  • 4 oz rice
  • 2 c stock (strong)
  • salt
  • pepper
  • curry powder
  • 1 lb chopped tomato
  • 1/2 c buttered bread crumbs
  • 1/2 c grated cheese


Preheat oven to 350F.

Cook the rice in stock seasoned with salt, pepper, and curry.

Put the tomatoes in alternate layers with rice in a casserole dish.  Sprinkle with buttered bread crumbs and cheese.

Bake for 30 minutes.

Note: Be sure to use really flavorful tomatoes with this, not the mealy ones supermarkets often get, particularly in the winter.
