Ingredients
- 4 oz rice
- 2 c stock (strong)
- salt
- pepper
- curry powder
- 1 lb chopped tomato
- 1/2 c buttered bread crumbs
- 1/2 c grated cheese
Method
Preheat oven to 350F.
Cook the rice in stock seasoned with salt, pepper, and curry.
Put the tomatoes in alternate layers with rice in a casserole dish. Sprinkle with buttered bread crumbs and cheese.
Bake for 30 minutes.
