Ingredients
- 1/4 onion, sliced thin
- 3 garlic cloves, minced
- 3 fl oz chicken broth
- 3 fl oz whipping cream
- 1 roasted red pepper, chopped
- 1 t light brown sugar
- 2 T fresh basil, chopped
- corn starch, as needed
- water, as needed
Method
Add onion to empty skillet and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in broth, cream, roasted peppers, and sugar, and simmer, scraping up any browned bits with wooden spoon, until sauce is slightly thickened, about 5 minutes. If needed, thicken with corn starch slurry. Off heat, stir in basil. Season with salt and pepper.
Mix in meat. Serve with rice or pasta.
Notes
SJ Note 20 June 09: I cut up the pork chops into bite sized pieces and baked them instead of serving whole, and served over pasta. It worked nicely. But thicken up the sauce next time.
