Ingredients

  • First Group:
  • 180 g stew beef
  • 4 c beef broth (or half water, half broth)
  • 1/2 c diced onion
  • 1 bay leaf
  • Second Group:
  • 1/2 c chopped carrot
  • 1 chopped celery stalk
  • 1 diced potato
  • 1 t salt
  • 1/2 T pepper
  • 2/3 c barley
  • water, as needed
  • Third Group:
  • 1/2 c diced mushrooms (optional)

Method

Combine first group of ingredients. Bring to a boil, then simmer until the meat is cooked and falling apart, perhaps 30 min. Add more water/stock if needed.

Remove beef and shred or chop the meat.

Return to the pot, with the second group of ingredients. Cook until barley is cooked and veggies are tender, perhaps 30 min.

Add mushrooms if using; cook a further 10 minutes.
