Chicken Noodle Soup

  • 2 t butter (unsalted)
  • 1/2 c sliced celery
  • 1/2 c chopped carrots
  • 1/4 c chopped onion
  • 1 diced potato (small)
  • 1 t dried thyme
  • 1/3 t dried sage
  • 1/3 t dried marjoram
  • 1/2 t sea salt
  • 1/2 t freshly ground black pepper
  • 3.5 c chicken broth
  • 1 t chicken bouillon
  • 2 oz egg noodles
  • 1 c cooked chicken
  • parsley (to garnish)


Melt butter in large pot.  Saute the celery, carrot, and onion for 2 minutes.

Add potato, seasonings, chicken broth, and bouillon.  Bring to a boil.

Add noodles and chicken; cook on low for 20 minutes.

Sprinkle with parsley and serve.


SJ Note 18 Dec 2011: Tasty!  A keeper.  Made the original size first - 6 servings, and it actually came out to about 6 servings for us - and froze the other four.  Doesn't freeze well, so I've pared down this copy and will just fridge any leftovers for lunches in the future.  If you want to try freezing it before adding the noodles, that's probably the best bet.
