Haddock Au Gratin
- 1 T butter (unsalted)
- 1 T Flour (Plain)
- 1/2 t Salt (Table)
- 1/2 t freshly ground white pepper
- 1/2 c milk
- 1/4 c grated sharp cheddar cheese
- 1/4 t grated nutmeg
- 1 t lemon juice
- 1/2 lb haddock fillet
- bread crumbs
Melt butter in saucepan. Add flour, salt, and pepper; stir until blended. Slowly add milk and bring to boil, stirring constantly. Remove from heat. Blend in cheese, nutmeg, and lemon juice.
Arrange haddock in greased shallow baking dish. Pour cheese sauce over top. Sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes.

SJ Note 6 Jan 2012: Tasty! A keeper. Also easy. Needs more salt and pepper; the nutmeg I used worked well. Have updated this copy to reflect all of that. Went well with roasted vegetables.
