Shrimp de Judy
Ingredients
- 1/2 lb shrimp (medium, peeled and deveined)
- 4 t minced garlic
- 42 g butter (melted (3T))
- 1/2 c chicken broth
- 2 T chopped parsley (fresh)
- 1/4 c panko (Japanese bread crumbs, plus more if needed)
- freshly ground black pepper (to taste)
Method
Preheat oven to 350F / Gas 4.
Put shrimp into a small salad or other mixing bowl, and add all ingredients except panko. Mix with a spatula and pour into a small casserole dish sprayed with cooking spray.
Sprinkle panko over the mixture (you might need a bit more if your shrimp aren't covered enough) and bake for 15 minutes, or until the broth has mostly evaporated and the panko is a golden brown color.
Notes
SJ Note 19 May 2012: We've had this before, years ago, and it seems we liked it then. We had it with panko then, and perhaps that made all the difference, but that bag of panko then sat around forever until we moved and threw it out. This time I used crouton crumbs cause that's what I had on hand, and perhaps that's the problem, but we didn't like it; it was really only mediocre. We won't be bothering with this one again, with or without the panko.
