Ingredients

  • 1 T olive oil
  • 15 g butter (1T)
  • 500 g new potatoes (cut into 5mm (1/4") slices)
  • 1 chopped onion (coarsely chopped)
  • 2 plaice fillets (skinned)
  • salt
  • freshly ground black pepper
  • 4 thyme (sprigs)
  • 2 tomatoes (cut into wedges)
  • 150 g green beans (trimmed and halved)
  • 1/2 lemon (cut into wedges)

Method

1. Heat a large frying pan; add the oil and butter and then the slices of potato, spreading them out in one layer if possible.

2. Add the onion to the pan.  Cook for 12-15 minutes until the potatoes and onions are brown and softened, stirring every so often.

3. Place the plaice fillets, skinned side up, on the work surface and sprinkle with seasoning and thyme leaves from 2 of the sprigs.  Roll them up, starting from the wide end.

4. Nestle the fish rolls into the pan among the vegetables.  Put a sprig of thyme on top of each roll.  Cover and cook for 5 minutes, then add the wedges of tomato and cook for another 3-4 minutes.

5. Meanwhile, add the beans to a saucepan of lightly salted boiling water and cook for 4-5 minutes.  Drain well and spoon into the frying pan.  Add the lemon wedges, for squeezing over the fish.  Serve straight from the pan.

SJ Note 2 June 2012: This was kind of odd, but mostly it lacked flavor.  We ate it (we were quite hungry), but we won't bother making it again.
