Apple Cake

  • 3 apples, peeled, cored, and chopped
  • 1/2 t cinnamon
  • 1/2 t nutmeg
  • 1/8 t ginger
  • 2.5 T sugar
  • For the cake:
  • 1 c flour, sifted
  • 1/4 c Flour (Wholemeal)
  • 2 T Flour (Wholemeal)
  • 1/2 T baking powder
  • 1/2 t salt
  • 1/2 c apple sauce
  • 1 c sugar
  • 2 T apple juice
  • 3/4 t vanilla extract
  • 3/4 t almond extract
  • 2 eggs


Preheat oven to 350 degrees. Grease tube pan. Peel, core, and chop apples into chunks. Toss with cinnamon, nutmeg, ginger, and sugar. Put aside.

Mix together dry ingredients in large bowl: flour, baking powder, and salt. Mix together wet ingredients in a separate bowl: apple sauce, apple juice, sugar, vanilla, and almond extracts.

Mix wet ingredients into the dry ones. Add eggs, one at a time. Make sure all ingredients all well-blended.

Spoon half of batter into greased tube pan. Spread half the apple mixture over batter. Spoon rest of the batter over apples and spread with remaining apple mixture.

Set timer for 60 minutes. Check at 45 minutes with tester to see if it comes clean. If not, you may bake up to 15 minutes additional.
