- 1/2 T oil
- 1/2 c chopped onion
- 1 c chicken broth
- 7.5 oz canned chopped tomatoes
- 1/2 c white rice (uncooked)
- 1 t minced garlic
- 1/2 t ground cumin
- 1 pinch salt
- 200 g cooked turkey
- 1/2 c sour cream
- 1.5 oz fresh chilis (finely diced)
- 1/2 c shredded cheese (a kind that melts)
- 1 T chopped cilantro (fresh)
Method
In medium-large saucepan, add oil and then saute onion until tender. Add combined broth, tomatoes, rice, garlic, cumin, and salt. Bring to boiling. Reduce heat to low. Cover and simmer until liquid is absorbed (about 25 minutes). Add turkey. In small bowl, combine sour cream and chilis.
In 8x8 baking dish, layer half the turkey-rice, half the sour cream-chilis, and half the cheese. Repeat. Bake casserole at 350F / Gas 4, or until hot and bubbly.
Notes
SJ Note 4 Dec 2013: This was very mediocre: lots of salt, pepper, etc got added at the table. I was happy there were no leftovers, because those would've been even worse. This has nothing going for it: it's not quick, it's not easy, it's not good - it's out.
