Pecan Pie 1
Ingredients
- 2 t butter
- 160 g pecans (halves)
- 3 eggs
- 1 c light corn syrup
- 150 g Sugar - granulated
- 2 T Flour - plain
- 3 T milk
- 3 T butter (melted)
- 1 t vanilla extract
Method
Preheat oven to 450F (230C, Gas 8).
In a heavy skillet, melt 2 t (10g) butter over low heat. Add nuts and stir for about 5 minutes, or until nuts begin to color. Let cool for 10 minutes.
Place pecans in the bottom of the pie crust. In a large bowl, stir together 150g sugar and flour. Mix in the eggs, corn syrup, milk, melted butter, and vanilla. Blend well and pour over pecans in crust.
Bake in the preheated oven for 10 minutes. Reduce temperature to 350F (175C, Gas 4) and bake for 40-50 minutes, or until golden brown and filling is set.

SJ Note 4 Dec 2013: DO NOT USE. I'm putting this here so I remember this recipe is crap and not meant to be used. I've tried it twice now - once with golden syrup and once with light corn syrup - and both times it hasn't set at all. It looks set - the top crust of pecans is certainly solid - so I've served it, but it's actually been soup inside. To add insult to injury, it's not even tasty! I forgot about the first time - that's why I did it a second time. While dying of embarrassment the second time, I remembered the first time. Must trial new pecan pie recipes.
