Mint Brownies
Ingredients
- 113 g butter
- 1 c Sugar (Granulated)
- 1 t vanilla extract
- 2 eggs
- 2/3 c flour
- 1/3 c cocoa powder
- 1/3 t baking powder
- 1/3 t salt
- Mint Layer
- 38 g butter
- 1.3 c Sugar (Icing)
- 1/2 t peppermint extract
- 1/2 t cream
- 1 T cream
- Glaze
- 10 g butter
- 1/3 c chocolate chips
Method
Brownies
Melt butter. Stir in sugar and vanilla. Add eggs. Add rest of ingredients. Pour into 7.5" or 8" square pan (greased on bottom). Put into preheated 350° oven. Bake for 60 minutes (until toothpick inserted in middle of pan comes out clean). Cool completely before adding mint layer.
Mint Layer
Melt butter. Add confectioner's sugar and crème de menthe. Mix until smooth and spreadable. You may need to add more crème de menthe to achieve a spreadable consistency. Spread on brownies.
Glaze
Melt together butter and chocolate chips. Cool for about 5 minutes, then pour over brownies. Tilt pan back and forth to spread glaze evenly over pan. Chill 20 minutes, or until glaze is no longer shiny.
Notes
*This originally called for creme de menthe; it was easier for me to find mint extract. If you use creme de menthe instead, use 1 T + 1 t creme de menthe in place of the peppermint extract and the cream.
