Pizza Sauce (Kittencal's)
- 3.5 T olive oil
- 1 c finely chopped onion
- 4 t dried mixed herbs
- 3 t dried oregano
- 1 T minced garlic
- 1/4 c tomato paste
- 800 g canned chopped tomatoes (two 400g cans)
- 1 t salt
- 1 t freshly ground black pepper
- 2 t sugar
In a saucepan, heat the olive oil. Saute the onions, mixed herbs, and oregano for about 2-3 minutes, stirring until soft but not brown.
Add garlic and saute for 2 minutes, stirring constantly.
Add the tomato paste, stir and cook for 1 minute.
Add in the remaining ingredients. Simmer on low heat for 30 to 45 minutes, stirring occasionally. Longer cooking time will improve flavour and texture.
Cool slightly and use immediately, or refrigerate for up to 5 days, or freeze.
